80# Amber Jacks on the rigs and Yellowfin Tuna over 100# are pretty tough critters... better eat your Wheaties!
Giant Blufin Tuna in the Altalantic off North Carolina on up to Maine.
400# plus Marlin, 200# Tarpon in Florida and Sword fish in the Gulf if you have the funds to chase them!

Airborn Mako shark/Big Tarpon/Marlin. Then Tuna/amberjacks they just break you off dont throw the hook by going airborn....

For me personally, I've got to go with Tarpon. I've hooked and fought a few but yet to boat one.
I did have a 10 ft. tiger shark nearly sink the boat once. He kept running under the boat and managed to tangle the line around the bilge plug at the stern. He ran out from under the boat the line popped out the plug unbeknownst to us...that is until we realized water was on the deck. Had to cut him loose and head for the marina at great haste. Even with a Merc 200 EFI we had about a 3 minute holeshot before planing enough to start draining the bilge. We installed two 1500 gph bilge pumps after that fiasco.

Dang Tiger Sharks.. I had a Huge Red Snapper.. looked to be 30# + sliced off by a Big Tiger.. Hey Charlie ..... something like this? This snap weighed 27˝ pounds back at the docks 8 hours after being severed by an 8' Mako as it was being pulled from the water on the gaff.

Yep Bobby.. cept mine got cut off at the gill plates.. all got was a 5# head back... Bastages! It's something to see when you have a Big Snap with color 30ft down and a dark shadow comes out.. and then there is a blood cloud in the water where your fish used to be.

It's all relative, IMO. As Spine said, a 100 lb tarpon on a flyrod would be a tough fish to get to the boat. Marlin, Mako's, etc all are big and jump so they qualify as well. YFT, AJ's, tough buggers, you betcha! Grouper, solid as a rock, would think they'd put the hurt on you. My nominee's: Light tackle Blackfin Tuna Catch one equal to the line test your using and they'll put the hurt on you for sure. Say 20 lber on a 20 lb rig Big Jack Crevelle on the standard offshore rig. Mother of all fights from what I've seen. Only hooked one, in the surf, finally broke it off after God knows how long. He deserved the lure more than I did. You want a challenge, fish for Jack's with a trout rig or flyrod, I'd suggest you fish a private boat, not a charter with other paying customers. Just my dos centavos!

They're not glamorous but magnum sized stingrays are a mother, especially if they get on the bottom. They're next to impossible to pull up.

Back in the early 80's I hooked up a Big Jack-C fishing for Kings with Capt Elliots. It took 30 minutes on a 40# class boat rod. It went around the boat 3 times stayed 100yds out most of the fight.. I could not gain any line. It was half as wide and as long as a pickup hood. They kicked it over the side before I could get a picture. I don't know what the record is for JC's but this one was huge to me. 
Big rays are nuts too.. I had several epic pier and surf battles with them . When they dig in it the pits, You have to walk up the beach and either they come up or the line breaks.

I was in the kings really thick once and the head to our gaff broke off. Landing those dudes was not a picnic.

Hardest fish to get in the boat? Pizzed off mako shark! I'd like to see how many people can subdue one of those psychotic, frantic fish from a 16' Boston Whaler ...
... and to the guys who lose big snapper to sharks, I can sympathize completely. Sucks to work a nice fish in, only to feel that thump, and then reel in half a fish.

Hey ZeektheGeek... after reading your post I wanna second your opinion on a pissed off Mako being the hardest to get into a boat.. In Feb of 03' I was on a Tuna Trip at the Midnight Lump off Venice L.A. and I had been fighting a 150lb Yellowfin for about an hour when all of a sudden a 362lb Mako came up and inhaled my YFT right infront of our eyes ... so we planted a Free Gaff in his Dorsal and it took 4 grown men to drag him thru the door.. Talk about pandamonium?????? watch what a 'GREEN" Mako does to the inside of a boat.. then watch the crew run like rats on a burning ship.. heeeew wee!!!!

I just don't think I would've been brave enough to attempt the freegaff ... harpoon maybe if I'd had one handy.

I agree just to reach out and gaff a shark of that size takes big "oysters"bravo. I whouldnt do it and im the crazy guy who jumps on the sharks to hold them down once we get them in the boat. and im not talking about the baby ones

If you're gonna keep the shark just wrap a rope around his tail, dally it to a cleat and drag the shark until he's drowned. Or do what we do and shoot the bastadge.

Mike is right on about tail rope, I had to drag a big blacktip for a hr once wouldnt have messed with it but we were in tx city rodeo. big blacktip. Bill

What we used to do in San Diego when I was a kid was get a rope around the tail & tie it off, then get a rope gaff sunk into it's front end & tie that off. Tighten ropes as needed until the shark can't move. After a little while, they get kinda docile.
