Baked striper supreme and deep fried striper

Preheat oven to 400° Meanwhile make preparations as follows: 4-lbs. of striper meat 6 slices of bacon 2 tsp salt 1 tsp pepper 1/2 cup chopped onion 1 clove garlic, minced 1/2 cup chopped green pepper 1/4 cup chopped red pepper 1 cup diced tomatoes 4 Tblsp Italian salad dressing 1-1/2 Tblsp Worcestershire sauce 1 bay leaf, crumbled (optional) Lay bacon strips in bottom of a baking dish. Sprinkle striper with salt and pepper and lay side by side on top of the bacon strips. Saute onion, garlic, green pepper and red pepper in Italian salad dressing for 3-4 minutes then add diced tomatoes, Worcestershire sauce and bay leaf and simmer for 5 minutes. Pour mixture over the striper and bake for 15-20 minutes.

kept two hybrids this weekend, filleted and left skin on- going to slap em on the grill soon- any suggestions for that?

Heavy duty alum foil, grease the centerline of the foil with olive oil or margarine, skin side down in the center of the foil, butter the fillet, spray some lemon juice on then sprinkle liberally with paprika, then wrap the fillet up with the excess foil on each side and the ends for about 10-15 minutes over medium hot coals. Fish should flake easily with a fork when it's done. Before and after pictures of it, papa and then let us know what you think of the recipe.

thanks redfin- i have done kings and reds over coals on the grill
we had crappie friday that had been lightly sauteed in olive oil and a dab of butter and served over a mango pica de gallo that was very good
