I have a big fish fry coming up for my wifes work and don't exactly know how many will show up. She has a head count, but it seems like a bunch never does show up after they said they will be there. My fish fillets are frozen in water in gallon bags. If i end up with more fish thawed out than i need, can i re-freeze them? You won't have to twist my arm to eat them if i can't..

My mother always told me not to refreeze. just cook them and have leftovers if there are any.

I got the same advice, but since it was frozen in water i was hoping this would be the exception to the rule.

I would think as soon as it thawed out, decomp starts and bacteria starts growing. The normal freezes may not get cold enough to kill them.

Just think how many times they thaw and refreeze in shipping! Sitting on docks and in warehouses.
I was sceptical, but after hanging around my Louisiana buddy I started not worrying about it. They do things differently and are living just fine. He'd leave his deer and fish hanging and in ice for days before cleaning them...it rubbed off on me eventually.
When they (commercial fisherman) catch fish it will be days before they clean them or even hit the dock. It's packed on ice for days with guts in them. It's horrible to think about, but once you know you never been sick in the past it's all gravy and fried fish!
I wouldn't worry about it.

I did a little research on refreezing fish. It is acceptable IF the fish is kept cold and not allowed to get to room temperature. So keep the fillets on ice or in a refer and it should be OK.

I re-freeze fish all the time, might freeze all the filets in a gallon bag and then separate into smaller bags later
if the freezing temp won't kill the bacteria, I bet the 350 degree grease will
You can kill a fly with a sledgehammer, But do you really need to son???
