I have a friend that is going to Port Aransas area and is going to be fishing for bull reds this weekend, the guide said these fish are not good to eat. What would be the reason there not good to eat.

The guide doesn't know how to cook! Slot reds are awsome grilled and the larger(you ca only keep 1) are excellent fried

Past 30" or so, the meat is really bloody and they get worms

Like most fish, the smaller one are better, but releasing
the big ones has more to do with conservation than taste.

use your tag on a nice 30-32 inch fish, several ways to
cook it up just fine.

Just made fish tacos from some reds we caught the first week of oct.

Cooked 6 pieces of bacon, chopped it up into bits, then took the grease and poured it into a cookie sheet and let it congeal. Let the fillet thaw, then soak for about 2hrs in a little italian dressing, Worcestershire, Mojo, and milk. Saute'd some onions and garlic in the remaining grease in the pan.

Took the fillets, patted dry, smeared in bacon grease, then cooked in the pan with butter. Let them crisp and sear on both sides putting some cracked pepper on them, then tossed in the onions, bacon bits, garlic, lime juice and seasoned to taste breaking up the fillet pieces into bits for the tacos.

Unfortunately didn't have anything in the fridge to make up some pico or mango salsa. Also needed some cilantro and would have preferred purple onions

All in all, it was great.
