You dont get more central than Brownwood....its 122 miles though. Check out Underwoods if you have the chance. I was raised on thier rolls and cobler.

One of my all time favs, Schoepf's in Belton. Hands down some of the best store bought BBQ I have ever had. Ribs and pork chops are pretty damn good.

Baylor, the BEST BBQ would be something I prepared and depending on whether I'm at the lake house or not, it's within 70 miles of you....LOL I've been wanting to try a little place in Meridian, but haven't been able to make it when they are open...(I'm generally at the lake on the weekends and keep on forgetting the place is closed on Sun)...When I try it I'll let you know...
Cooper's in Llano (about 130 miles from Waco) is awesome and if you ever get a chance go and be certain to get what you want, but you have to try a pork chop!

Though it is over 70 miles from you. You may want to spend a day hangin out in the Austin area, just to justify a trip to Dripping Springs and the world famous Salt Lick. I would still consider that to be Central Texas.

Texas Monthly just named Snow's in Lexington as their # 1 pick for best BBQ in the state. Lexington is real close to Waco. They are only open on saturdays till the meat runs out, get there early....

Maybe not "Central" but there used to be a retired USAF MasterSgt. that had a BBQ pit in Eastland, TX that had some of the best BBQ I ever ate.
One of our favorite stops for lunch and/or dinner when my friends and I were concentrating on those Texas Bobwhites out that way.

We go out to Brownwood every year for family reunions and I eat there twice if not three times in a weekend and I bring home about 14 dozen rolls and 5lbs of meat before we head home. It usally last me about a week.
