Made my Hatch chili pepper run this morning...20# hot...20# mild... 1 hour over the hot pit and a six pack of coors light (yeah it is hot out there) got em all roasted... Here's the recipe I entered in Central Markets Hatch Chili Pepper recipe contest... hope you enjoy it...

1 cup cooked squash
1 cup (roasted,peeled and deseeded) Hatch chili peppers (hot or mild)
2 cups cooked cornbread
1/2 stick butter or margerine softened
1 cup onion chopped
1 1/2 tsp. poultry seasoning
1 can cream of mushroom soup
salt and pepper to taste

Mix all ingredients together well and put in a greased 8"x 8" casserole dish

Bake 30-40 minutes @ 400 degrees

Hey Thanks dd,
Was at Grapevine visiting relatives this weekend and went over to the Central Market at Southlake and picked up some hot Hatch chiles. These were much better lookin than the ones I picked up in Taos.

It was my first visit to a Central Market. That place is awesome !! First time that I ever spent eight bucks on four oranges. lol

Liked the 57 Apache pickup sittin out front loaded with Hatch Peppers.
