got a bunch this weekend . really dont want to do fried as much as i love it the dr. says its not good. got any good recpies other than in that good fat!! THANKS IN ADVANCE.

Grill it on a gril plate over med heat. Not too long though or it will suck. Nothing special other than the amount of butter and lemon you use. I love it.

Marinate in italian dressing throw on screaming hot grill. close grill for the last couple min to cook through

Grill them over some hickory. I just season with salt, pepper, and lemon. My mouth is watering just typing this

Yeah, what bowfin said. I like to drench them in butter and then sprinkle Cajun seasoning on them and put them on the grill. They will look almost black, but they will be very spicy and very juicy. You might try leaving the butter out and using a veggie oil or something. I think I might have to fire some up!

You can also poach em in the oven with some white wine, butter parsley and lemon.

Blackened.
1st make sure all the red meat is off the filet.

I take butter or margarin, lemmon and garlic. Mix together and melt the butter. Pour it over the filets in a bowl and let set.

I take a cast iron skillet and put it on my fryer burner. Use just a small amount of oil and heat the skillet untill the oil starts to smoke.

I lay some fillets on some foil and sprinkle Don Perdomes Red Fish Magic blacken seasoning on them. Any blacken season will work but thats my fav.

Put them on the hot skillet, seasoned side down and let it cook for about 1 minute and sprinkle the top side with some more seasoning. Flip it over for about one minute as well.

Take it off and let it set for a couple for minutes and it will continue to cook on its own. The fillet should be dark on the outside and white and flakey on the inside. If it still appears transparent then either turn the heat up a bit or cook a little longer.

If the skillet starts to get a bit dry then just add a few drops of oil and heat it again.
