The way that I do it is sprinkle a little (Doesnt take much!) Tony's seasoning an both sides of the fillet.

Get a non stick skillet hot, melt a couple of pats of butter (careful not to burn the butter) the drop the fillets in until they brown 3-4 mins and flip until brown.

Good stuff!

Chuck, what is the stuff at the top next to the fillet, at first I thought it was corn relish, but next to it, there are beans, are those two different dishes?

Weeeeeeell... 2 different sides. The night before I had made some black bean salsa that was really good, so thats what you are seeing on the left next to the green beans.

Just to the right of the black bean salsa is my first attempt at mango salsa. The mango salsa looked like hell, but it really tasted good and went great with the tillpia.

I put a little bit of olive oil on both sides then garlic powder, all season salt and pepper. Lay it on foil on the grill or a pan on the stove, it tastes great! ::

No more Tilapia in this house!! I heard something about this on the news a few days ago. There are too many other good fish choices that aren't so unhealthy. If I am going to eat something as bad for me as bacon or a hamburger it will be bacon or hamburger.

http://www.newsmax.com/health/tilapia_dangerous_acids/2008/07/08/110856.html

"Tilapia has higher levels of potentially detrimental long-chain omega-6 fatty acids than 80-percent-lean hamburger, doughnuts and even pork bacon, the article says."

“For individuals who are eating fish as a method to control inflammatory diseases such as heart disease, it is clear from these numbers that tilapia is not a good choice,” the article says. “All other nutritional content aside, the inflammatory potential of hamburger and pork bacon is lower than the average serving of farmed tilapia.”

Quick-Poached Tilapia

Cover the bottoom of a 12 inch Corningware dish with tilapia fillets.

Pour 2 to 3 tablespoons of Paul Newman's Sesame Ginger salad dressing over the fillet.

Bake covered in the microwave on 1005 power for 5-7 minutes.

Serve with white rice.
