If you can find one of those fine-screen covers cooks use exclusively just to keep oil/grease from splattering, it helps a bunch.

Usually the larger the egg sack, the more the splattering it will create when they hit the hot oil and continue to cook. The increase temperature gets the inside of the eggs hot and then they will pop to release the water content...water and hot oil don't mix well.

Used to have em for breakfast when we camped on the Illinois river in Oklahoma. It was a long time ago but I remember they were great.

The eggs from most panfish are absolutely delicious but I don't care for those from larger species.

I thought the same, until my daughter asked why we don't eat them....tried crappie roe, and it was excellent....although its not something I will cook everytime, its good once in a while...

I always lower the temp. a little bit to keep them from popping quite so much. After they are cooked through I turn the heat back up to brown them. I would rather have the fish eggs than the fish.

Yeah, they're delicious. When I was younger, any time I went fishing with my dad I always wanted to bring home whatever was legal, and always "made" him fillet/cook it for me right away when we got home.

Lots of times we'd eat the eggs as well, especially from panfish.

I seem to recall Yellow Perch eggs being the best. ( True yellow perch, not sunfish )

Anything fried in butter with a little salt and pepper will taste just fine. IMHO

never tried them. What do they taste like and what is the consistency/texture? Mushy...chewy...what?
