Fishwhisperer game me a great tip for Crappie but it's not mine to claim...family secret I believe but he might chime in on it and give it up..

All I can say is it's UNBELIEVABLE!

I like Louisana breading you can get it almost anywhere. i like to soak it in milk with a egg and whatever seasonings you like let it set for a couple hours in the fridge. put it in a dish that has a lid with the breading then shake it up and put it in the grease till it floats.

First fillet the fish. Take the fillets and put 'em on ice. After about 15 minutes on ice they are ready to eat.

I use this for all the fish I eat, especially shad.

I like CrappieMaster's fried recipe from his website, or Zataran's "Southern-Style" seasoning with some added Red/Black Pepper.

I baste my meat in milk/egg/brown mustard/lousiana hotsauce for an hour or two before cover with corn meal.

Fry in peanut oil, as it cooks better at higher heat and gives the fish a better flavor, though may have more fat than other oils. Crisco ain't bad either.
