sounds like you should stay in the canal moving around so you don't run aground then get off and make drifts over grass and sandy spots or anchor and fish grass lines or holes in the grass. You can get out of the boat and wade fish too but wear some kind of shoes. i got stitches recently, no kidding. look for pretty, clear water and baitfish. also you'll see smooth spots like oil slicks. those are trout slicks from them digesting. good indicator. birds feeding is a dead give away. I would use popping corks with a 3 ft leader and berkley 3" gulp live shrimp. new penny color or white. i like 1/8 once jig heads or #3 flutter hooks(they are weighted). hope that helps.

get a Hot Spot map......

check out coast guard shoreline and decros island shoreline; anchor or wade, just watch out for the hump!

also, mitchells cut is good, but you'll have to follow someone out thru the cut. once you run it it's not a big thing. stay between the big poles and you'll be just fine.
