I have tried this about ten times and it is awesome so I thought I would share.
7-8 LBS Baby back Ribs
2 days before cooking (Thursday night) pull membrane off back of all three racks with a butter knife.
Apply 1 whole 5 oz bottle of Tabasco sauce between all three racks
3 splashes of worchestershire sauce per rack per side
Rub it in
Apply fiesta brand rib rub or your favorite rib rub or spices- you are doing this less liberal than usual so not to drown out the tobacco.
Wrap in foil tight and slip in food saver bag and seal.
Place in fridge
2 days later (Saturday) open bag and apply foil wrapped ribs directly in pit. I prefer to indirect heat for about four hours. The tobacco will burn off if you do not wrap them and if you use too much direct heat.
The last hour unwrap the top and pump up the smoke. (You will get less smoke taste than if you applied the smoke first, but enough to taste the smoke) This process will also allow them to have a less boiled look.
Believe it or not they are not HOT but they are super flavorful. You lips will tingle after the fourth one or so. If serving to the weak willed make sure to have some regular ribs or chicken to allow them some safety. I give it a 3 out of 5 for hotness
I make lots of different style ribs but this one was just unique. Hope you like it.
FYI--- I have used different types of heat - Cholula, habanera paste, jalapeno juice..... And the Tabasco flavor stays on the ribs better. The other is really a waste of time so far.
