Went to a Technique Class a week or so ago at Williams-Sanoma and they had this Black Bean Salsa. It was really good. Gonna make it for dinner tonight.


Black Bean Salsa

1 ½ tsp Cumin
2 (15 0z) Cans black beans (rinsed & drained)
1 (15oz) Can whole kernel corn (drained)
1 Tomato (diced)
1 Red Pepper (diced)
1 Small purple onion (chopped)
½ Cup chopped fresh cilantro
½ Cup chopped fresh parsley
1/3 Cup margarita mix or lime juice
¼ Cup olive oil
3 Cloves garlic (chopped)
½ tsp Salt
1 tsp Red pepper flakes
½ tsp Black pepper


Combine all ingredients and refrigerate for 1 hour.
