I soaked some fillets the other day in Texas Pete's Hot Sauce for a day....dipped them in egg...rolled them in flour/ritz cracker mixture...fried them up....VERY GOOD!

i like to soak mine in buttermilk, with some spices mixed in. Texas pete's is some good stuff!

I like to soak them in beer, and put lemon pepper in with cornmeal and flour. Hot Sauce is good as well.

milk, egg, worcestershire sauce and Tabasco brand Chipotle sauce. Sprinkle lightly with lemon pepper when they come out of the fryer.
