I prefer a cream sauce with my fish, that being said.

I use, 2 cups of cream - Half and Half
1 stick of real butter
2 TBLS of Flour
How ever much crawfish you want
tony chacheries to taste, the more spice variety, not the salt free kind.

melt butter, add flour and str a couple times, dont want it to brown up, add your cream and turn to high. till it boils a little than down to medium for about 5 min. make sure your fish is ready for a good bath by this point. the sauce should thicken up a bit let simmer until it is right for your likin. than add the crawfish, and heat them through. Spoom over your fish and go to town.

Also have a recipe for a sauce if you boiling your own crawfish. not cream based

Brown two chopped onions, 1/2 chopped bell pepper, and 2 chopped celery stalks with a stick of butter. Add 1 can of rotel, 1 cup of water, and two small cans of tomatoe sauce. Let it simmer for 20-30 minutes. Add crawfish and simmer for 15 minutes. Add one can of Cream of mushroom soup and simmer for 15 minutes. Serve over rice and/or baked/fried fish.

It's similar to some people's ettoufe but a very easy version.
