Made this for a side dish for our Mother's Day dinner. Turned out greaat and everyone ate it up. Thought I would share.
Corn Salad...serves 8
2 15 oz cans whole kernel corn, drained
(I used 1 yellow corn & 1 white shoepeg)
2 cups grated cheddar cheese
1 cup mayo
1 cup green bell pepper chopped
1/2 cup red onions, chopped
1 small bag of chili cheese fritoes, crushed
Mix all ingredients and chill. Add corn chips just before serving.
