I know some of you have talked about this in the past but how many of you fella's use mustard on your fish before batter??? I have done it for about 10 years. I learned it from a coonass on Redfish. i hav esince then moved to a combo of LA hotsauce and mustard. then I batter it up with Zatarains/cornmeal. I was amazed to see this recipe in the May Texas Fish and Game magazine last night.
This is a little different but its a good change in pace from the seaon the meat/ straight corn meal thing. When I have a big fry I do half and half....some this way and some old school. If any is left over it is the old school.
I am looking for a really good( or several good) recipe for homeade tarter sauce. I have on that's kinda Tex Mex that I use on flounder but I want another one. Someone help me out???

yea use mustard the cost in your fish batter best dang fry fish you will ever eat . i always do my catfish like that man is it good. you will love it give it a try

I COULDNT EAT THE WHITE BASS WE USED TO CATCH IN THE TRINITY RIVER AT THE LOCKS. A GUY DOWN THERE TOLD ME COVER THE FILETS WITH MUSTARD IT WOULD TAKE THE BAD TASTE OUT. SURE ENOUGH IT WORKED. BUT AFTER THINKIN ABOUT IT JUST QUIT KEEPING THEM STILL WONT EAT FISH OUT OF TRINITY SURE WAS FUN CATCHIN UM THAT WAS 30YRS AGO

Works great for all fish!  I've been doing it a couple years now and will never go back to flavorless fish! We had a fish fry april 5th with a few old timers and they were looking at me like I was crazy but once they tried it, I couldn't cook it fast enough! Had two or three people say that it was by far the best fish they had ever tasted. oh yeah and it was all sand bass! (I save the crappie for my wife and I) p.s. Try the tony chacheries fish fry and hush puppy mix.

i will have to try this do you use straight mustard or do you use it reduced with water before you put in cmeal

Try mixing in a little LA hotsauce too. I don't like dryed off fish and then mustard. I prefer to leave it just a tad watery. I love it that way. I too have cooked it for old timers and most would rather have the old school. I have cooked it for folks that said they "don't eat fish". After a few minutes they couldn't keep there hands out of it.

I use Spicy Brown mustard on mine. That, and Louisiana Fish Fry in the blue package is all you need. No salt, no pepper, just those two ingredients. Made the mistake of cooking some at my family reunion last year. Now I'm totally responsible for this year's fish fry!  (I save the crappie for myself too.)
