Not to bust anyone's bubble, but a pork butt roast is about the easiest piece of meat you can cook. It doesn't take an experienced cooker to tear one of this up.

I'd have to disagree with this. Making edible pork butt is fairly easy. Making exceptional pork butt is not all that easy. If you just want edible you can throw it in the oven and cook it until it falls apart. If you want exceptional you have to work at it a little.
One thing you should never do is base doneness of bbq soley on cook time. Cook time is just a gage to let you know when to put the meat on so it will be ready before meal time. Doneness should always be based on internal temperature.
