Try this next time :
Cut the potatoe longways
Insert two slices of onion
Wrap slice of bacon length wise over cut around potatoe
double wrap with heavy duty foil
Cook at 400 for one hour
Grab the butter and sour cream !!

Yep Chuck, The bacon imparts a great flavor in the skin, which is my favorite part and the onion fully cooks out into the center of the potatoe.
Be sure and double wrap with heavy duty foil. If you don't, more than likely the grease from the bacon will drip out and cause your oven to smoke.

Nut OK nut... I tried these tonight. I am the kind of person that has to doctor a potato up with butter, sour cream, green onions, etc. I tasted one of the potatoes with absolutely nothing on it and I tell ya what. That potato doesn't need anything on it. It's great just out of the foil! My wife and son (who normally doesn't eat baked potatoes) loved em too! Thanks for the recipe!!!

What ever happened to thick skin potatos? When I was much younger Mom would foil wrap the potatos and put them in the oven for I don't know how long. Ya take the foil off, cut the tater in half and scoop out the white stuff and slather bunches of butter on it making mashed taters. The best part was the think skin. Put a couple of pats of butter in side and bite down on it and feel the butter dripping down your chin.
Todays taters are so thin skinned you can't even scoop out the white without destroying the skin.

Before wrapping with foil my wife sprays potatoes with Pam spray and sprinkles the potato with Grill Mates. They are great.
You could try that with your recipe as well.

Let's see, two slices of onion, bacon, spray with Pam sprinkle on Tony Chacere's Creole seasoning. Bake 1 hour. Add butter, salt & pepper. Put next to Salmon filets and steak. Got it! Dang !!
