My Grandmother's Meatloaf

This is my Grandmothers meatloaf recipe. I think that it's one of the best, but I am a little biased here. I just put on in the oven so I thought that I would post the recipe.
It calls for 1 to 1.5 pounds of meat, but I use 2 and bump ingredients up some.
Hope that you enjoy!
Grandma Alma's Meatloaf:
1 to 1/4 Lbs. ground meat 1/3 can of Tomato soup 3 Tbsp catsup 1 small bell pepper 1/2 medium onion, chopped fine 1 Egg 1 Tbsp Worcestershire sauce 1 Can diced tomatoes, juice reserved Crackers Salt Pepper
Preheat oven to 350 F
Mix meat, catsup onion, egg, Worcestershire sauce, tomatoes, salt & pepper with enough crushed crackers to make the loaf firm.
Mix the tomato juice, the tomato soup and enough water to make 1 cup of liquid. Pour the liquid over the meatloaf
Cut the bell pepper into wedges or rings and place on top of the meatloaf as decoration.
Bake at 350 F for 1 hour and 15 minutes

Im going to try it myself. My basic recipe is equal amounts of ground beef and sausage and couple of eggs. I may use spaghetti sauce or even bar be que sauce to get a different flavor. Add bread crumbs or croutons. Finish off with grated Cheddar on top
Experiment some you can come up with great meat loafs that don't taste like hamburger and catsup.
Always let a meatloaf set for a while to let the meat rest and absorb the juices before you serve it.
Second day meat loaf is always better than the first day. Try frying some slices in your hot iron skillet.
If any left on the third day throw it out. Second day meatloaf?!?!?! You can tell that you have never eaten at my house! Aint no such thang as leftovers!

Meatloaf on the grill..........
Take your favorite meatloaf recipe and cook it on the grill. If you are using a gas grill as we do, put the meatloaf on foil with some holes punched in the foil. Have the meatloaf on one end of the grill on the foil on low heat. Have wood chips on the other end with a higher flame.
We like this so well that we haven't cooked one in the oven in years. Plus it is less greasy since grease drains through the holes. The low flame puts a little sear on the bottom. If you don't want the sear don't have any heat under the meatloaf side.
Also, we don't make the typical big loaf style meatloaf. We make several smaller ones. They look almost like big domed up hamburgers.

gonna try this one tomorrow night. Just remember when smoking a meatloaf, use very little smoke. A little goes a long way. I know from experience!

hmmmm...was it good. tried the original receipe and might just be the best meatloaf i have had. i added fresh garlic, no bell peppers. next time i am going to use this receipe and smoke it as suggested above Normally I leave off the bell pepper just because I'm not a big fan of it and in my opinion it doesnt add any flavor to the dish. It's just there for appearance. I will try adding some fresh garlic next time. Glad that you liked it!

sounds like the hamburgers I make... cept, i dice up onions, peppers and garlic real small and mix it in.. also some Mrs. Dash.. and don't use tomato soup or diced tomato/juice, but put sliced tomato on after they are cooked... we call em house burgers basicly a meatloaf sandwich! I've yet to have a burger in a resturant that even comes close!

kevin Gonna have to give that a try! I was thinking of doing burgers tonight on the grill.
