Has anyone tried soaking fillets in a hot sauce like Louisiana or Tobasco...anything like that?

Then coat them with a dry breading....either baking or frying them after they are coated. I'd think that would provide for a unique flavor.

Something different.

I soak them in a milk/cholula combo. The milk will help with the breading. Buttermilk really works good. Makes a killer crust.

Ditto on that one. I use buttermilk as well. works good for chicken too.

I am with Brian add hot sauce to the milk you can add how much you like the milk will give the batter some sticking power.

Try Lawry's Louisiaian Hot Sauce Marinade. I bought some the other day at Tom Thumb. Man it's good. The Garlic and herb is great to grill fish with.
