Anyone got any good recipes for grilling catfish fillets? I've got some nice big fillets and need some new ways to cook them. \:\)

Cook 'em slow over a low fire. When the tomatoes are done, so are the fish. Every now and then I'll crank the fire up to sear the bottom of the filets. Move the filets constantly to keep them from sticking. If they try to stick a lot, turn the fire down to lowest setting. Make sure the fish are nearly room temp. before placing on the grill....and have soaked in the lemon/Ball's/cilantro mixture for at least 20 min.

That seasoning is NOT anything like Tony's...so dont try to substitute it. You can buy it online. Its called "Ball's"

Right before you take them off the grill, drop some blue cheese crumbles on top and let it melt.
