got creative with my late breafast this morning...

didn't jot down how much of what I used or anything, but it was good and I thought I'd share... get creative and do your own thing with it...

this is what I used:

Sliced Deer/Pork Sausage (linked, I cut it into thin slices, bacon would have worked really well)
Diced Onion
Refried Beans (just season up the cheap canned refried beans)
Eggs
Shreaded Cheddar Cheese
Sliced Pepperjack Cheese (cut into narrow pieces)
Tortillas

How I did it:

sauteed the sausage and onion till it was just right for me
scrambled my eggs (seasoned with S&P, no milk)
warmed up refried beans and seasoned them with garlic, season-salt and pepper
put cheddar and pepperjack cheese on one tortilla (covered surface of tortilla)
spread the sauteed sausage and onion out over the cheese
added eggs on top of the sausage and onion
topped that off with more cheddar and pepperjack cheese
spread refried beans over the other tortilla
heated my pan/skillet/whatever it was
added bottom tortilla (with alla the stuff on it) to pan
topped it off with the tortilla with beans on it (seems easier to add it to the pan a piece at a time, just me though)...

don't use too high of a heat, of course... cook both sides til they're kinda crisp and the cheese is melted... cut it up and eat it...

kinda wish I woulda had some bell-peppers...
