Cabelas sells a boxed batter that is excellent on anything. Or at least in my opinion. Its called "shore lunch. I've used it on fish, chicken, duck, goose, pork. Every time I think about it my mouth waters. For someone like me who is defficient in the kitchen and doesnt know how to season anything properly, its been a great discovery.
