Lol bream, I have had them once a long time ago cooked up by a rancher friend, he had some very fresh ones. I recall it took a few beers to cut the first one to bite size. These were just fried and were good.

When i was younger I did a lot of cowboy day work on ranches west of Pecos south to Marfa and to north of the Peak. We always ate and worked at the same time. This was a common practice.
The best way is when they are fresh, Lay a piece of barn tin or sheet metal next to the branding fire as they are taken dump them in a bucket of water to clean them off. Throw them on to the hot metal, once they are cooked the will pop open like a sasuage. Pick them up and eat while they are hot.

I like them - Mom cooked up a batch - GOOD STUFF.
I can't eat them whole - they need to be sliced or cubed.
Whole makes my imagination work to hard.

Does anybody know where you can get any in the d/fw area?I used to get 'em from my buddy in the panhandle but he can't get 'em anymore.Nothin' better than fresh ones with cream gravy and a cold beer!!!

If you already have them clened and cut into bite size chunks all you do is Mix up 1 egg,1 cup milk and dip or soak for a bit, then mix up equal parts of flour & cornmeal that has been seasoned with salt & pepper, garlic and other spices you like.. Dip in hot oil, they will float when done.. drain on paper towel. serve with dip or what ever you like... I'm cooking Turkey Fries this way this eveing for my husband  .. Enjoy

Well, add me to the list the has fallen and tried them. Had dinner at the Reata in Ft Worth tonight. I gotta say, they aint bad!  You would not know what you were eating if a couple of them wern't so darned round!  A vendor from Minnesota took us out and even they tried them at our urging. Verdict...  I've heard they are good when cooked good and bad when cooked bad. Sounds like just about everything else I have tried.

My dad used to cook bunches of them on a week long trip to Ute lake for a big crowd. He dipped them in a milk & egg wash then fried them in a big cast iron pot. He would only use hog lard to cook them in. some mighty fine eating. He also fried all of his fish in lard.
