You have to collect it over time. Just get yourself a clean jar and add to it every time then refridgerate. you will have it filled before you know it. Put a lid on the jar and it will last a very long time. One thing about this method is you get layers of bacon crumbs in your jar so before you use it, stick it in the microwave for a minute or so and the crumbs will fall to the bottom.
IMO, there is no substitute for bacon fat in some recipes. (I can't make decent saurkraut without it.)
If you have to substitute, Crisco should do the trick for frying.
Just curious, what ya cookin that requires a full cup of bacon fat? (Sounds tasty!)

4 1/2 cups of Rice Chex
4 1/2 cups of Corn Chex
4 1/2 cups of Cheerios
1 16 oz. can of salted peanuts
1 16 oz. can of cashews
1 16 oz. can of mixed nuts
Pretzel sticks
1 cup of bacon grease
4 tablespoons of Tabasco
2 tablespoons of garlic
1 1/2 sticks of butter
Cooking Directions
Pour all of the cereal and the nuts into a turkey roasting pan, mix together well. Then cover the top with a layer of pretzel sticks. In a small sauce pot, melt down butter and mix together the Tabasco, bacon grease, and garlic. When all is melted and mixed together well, pour over the trail mix while stirring all together. Put in the oven for 2 and 1/2 hours at 225 degrees. Stir trail mix every 30 minutes. When done take out and allow to cool off before eating. It always taste better when completely cool.
