Bake off enough crappie fillets to make about 3 cups cooked product.
Mix together
1/2 to 3/4 cup mayo
1 egg
1T brown mustard (or yellow)
dash salt
Cracked pepper
1 lemon squeezed
1 Tablespoon Old Bay seasoning
Some chopped cilantro or parsley
Jalepeno if ya like it hot.
Add Panko bread crumbs till it comes together.
Make small hockey puck looking cakes.
Then set them in the extra bread crumbs on the top and bottom.
Cook over meduim heat in skillet that can go in the over. Use mixture of olive oil and butter to brown on both side. Once you flip them over the first time go straight into a 350 degree oven for 8-9 minuetes.
These are awesome with remuloude sauce also!

Thanks for the offer Brian. Yeah I am a little to far away!! Fun in our town is watching cars rust and hanging out at the Dairy Queen.

Sounds good Brian i would guess that you would chop up the filets after cooked right? or could i break up while cooking to add some texture?either way sounds good!

I like to flake them just like lump crab meat! Im telling you this one is a hum dinger. I almost got out of the car business to go to culinary school and I definatly put my name on this one .
