Go to Academy and buy you a Nesco Food Dehydrator and the Nesco jerky cure. Get you a jerky gun while you are at it.You can add to the cure, I add several fresh serano peppers ground in a food processor, ground red pepper, and some cayane pepper. Use the peppers to your taste.
I use venison or ground beef, the beef being 93% fat free. Get you a good timer to shut the dehydrator down. Venison, I do 4 to 5 hours, beef 5 to 6 hours.
