Hey, HotDigadyDog, thanks for this. I've copied it too and will give it a try at home and then again at a camping trip with the family this Spring. Sounds like just the thing to munch on around a campfire (along with some cold Heineken of course)!

Here is another one. I'll bet they are all good.

1 12 oz can light Beer
1 1/2 cups Flour
1/2 tsp Salt
1 tsp Paprika / or add a little crushed red pepper flakes
1 extra cup of flour for dredging

Directions
Pour the beer into a large bowl. Sift the flour, salt, paprika, and add pepper flakes if you like into the beer, whisk until the batter is light and frothy. (The batter may be used immediately or stored in the refrigerator for up to 1 week, but be sure to whisk it occasionally). Heat at least 2 inches of oil in a frying kettle or electric fryer. Just before it reaches 375F, quickly dredge the pickles , fish or whatever with flour, shaking of excess then dip in the beer batter, coating well, and drop them into the hot fat (do this in batches of no more than 3 or 4 at a time cause its quick). When they are brown on one side - less than 1 minute - turn and brown them on the other side. Drain on paper towels.

Ranch with a little hot sauce added to it? The kind you put on buffalo wings. It gives a different flavor, and a little kick.

I've always put ketchup on my friend pickles. I'm not a ranch lover like the rest of America. \:\)
