I normally grill my fish but I have a taste for fried flounder. Should I use olive oil and what do you recommend for the crust. I thought about crushing corn flakes.

I try to eat healthy and stay away from the fried food. Thanks TFF.

Use panko seasoned to your liking and fry in a small amount of butter

I used to manage a meat mkt. and seafood dept. I didn`t order and sell much flounder because of the price. Maybe 2-3 times per year. When I did order it, what didn`t sell by the 2nd day went home with me @ a reduced price. Usually about 2.99 lb. Best fried fish you`ll ever eat. I always used corn meal with a little flour added with seasonings.
