We caught some striper yesterday at Tawokani and I'm wondering if it's safe to make ceviche with some of it. We do it with salt water fish without worrying, but is freshwater ok too?

You can, it has to be frozen below -5 degrees for at least 10 days to kill the parasites. I have done it before, and it makes an "OK" ceviche.

Oh yes, saltwater fish get their share. Same handling as mentioned above is prudent.

You can eat it fresh without freezing it. I've been eating fresh ceviche for over 20 years, all fish caught in lakes around Tyler and Dallas and I've never had a problem with parasites. I squeeze some lemon and lime juices over the FRESH fish and let it sit in the fridge in a ziplok bag for 2-3 hrs, then drain it, pour pico de gallo over it and eat,

You can get drunk on Milwaukees Best too, but that doesnt mean its a good idea! roflmao
