....taking about the peppers. They are like a vegetable version of bacon. They make most things better. I prefer green chilies more but I love me some fresh jalapenos in most anything.

the heat is way too inconsistent. I started using Serrano peppers instead.

Theyre just pickles to me now. The fresh ones are better and go in a lot of my cooking. Bobs right about Serranos. I use them in pico and salsa for heat. Fresh japs are for crunch and taste.

While I enjoy some peppers, Jalapenos are not on that list. Just don't like the flavor. Can tolerate them cooked into some dishes but never raw.

I planted three jumbo jalapenos. Now I can't pick them fast enough. Last weekend, I made my first batch of pickled (1 whole, 2 sliced), plus 1 pickled egg with sliced.

Problem is I eat one, it is like a bell pepper. Eat the next and it blows my head off. That's why I eat cayenne's if I want fresh peppers. Consistency.

25 more days and I'm going to sample my first jar.

I like them, if you want them hotter then grow your own, The trick is to use a sandy loam soil and limit the watering. Leave them attached to the plant until fully ripe.

Oh yeah all the time, and you can get them hot if you grow your own, those tame jalapenos are almost like a bell pepper, I like them, fresh, grilled, and pickled, serranos are supposed to be milder but somebody forgot to inform them about it.

A serrano at 10,000 23,000 Scoville heat units can be surprisingly hotter than a jalapeo (2,500 8,000 SHU). In fact, the hottest serrano can be 9 times hotter than the mildest jalapeo pepper. But on average you are likely looking at a 3 time difference in heat.

Nothing like a fresh jalapeno scored out and filled with a chunk of chicken breast, a sliver of red onion then wrapped in bacon and smoked on the simmer for a couple of hours. Finish up on the grill and serve it up.

Jalapenos are nice but there are many other flavorful peppers.

The dried ones of various types are also great if you know how to use them.

So far I have only ate 1. I made some fajitas and sliced it up with my onions and bell peppers. It was hotter than any pepper I have ever had, way hotter than my Habs or Serrano's. Two hours later my mouth was still burning. I still have 11 but not sure what to do with them

I have tried 5-6 different ones for my business and just cant find one I love. Now the ones and the beehive in Albany will ruin your meal if you aren't careful.

I like them especially the flavor of a good jalapeno. Palios has a Jalapeno Hot Pepper pizza I just tried last night. Wow was it good, loaded with delicious jalapenos.

Well that explains it, I thought I was just getting unlucky when I was buying the milder serranos and then burning my lips off, lol.

My all around pepper is the Serrano.
Best flavor to me is the habanero (cook out the heat)
Piquins are unique and I like em.

Jalapeo is probably 4th or 5th on my list. I miss having my pepper garden fo sho.

Fan. I probably eat them once a day and use the juice of pickled jalapeos on everything I cook or grill. From chicken fried steak to chili, soup and chicken breast.

For you Jalapeno specialists, I've always been told the rounder the end, the hotter the pepper. As in a Jalapeno with a sharp pointed end is less spicy, blunt end, is spicy.
What's your experience?

love jalopenas but hate the cutting the ends off,splitting them and scraping the seeds out.....I wear rubber gloves and try to do it under running water but still suffer coughing and eye-watering...
anybody got an easy way to do it?

Coring tool then cut in half. This is the one I use and it works great.

Not any more. Used to love peppers, the-hotter-the-better. These days all kinds of things get the stomach off kilter and anything with any heat in it will have my gut churning for days.

Jalapenos are just pickles these days, and, "Yes," I like them.

I saw a 4-Country Reporter, or maybe it was a Channel 13 Saturday afternoon cooking show, and the host went to a pepper farm and talked with a pepper producer.

The guy grew all kinds, and educated the viewers.

1. The "white, inside lining" is the "hot" part of a pepper, not the seeds. Sure, the seeds are hot, but that is due to the attachment to the lining, which is where the "heat" stems. Makes sense...

2. The older the pepper, the hotter. Therefore, regarding peppers such as jalapenos, the ones with "white streaks" or veins in them, are hotter. Green jalapenos turn red with fully ripe.

3. Jalapenos were named after Jalapa Mexico.

I do like 'em (especially stuffed and grilled) but I wasn't impressed with the Mammoths this year . Zero heat .

I heard once that the heat of a particular jalepeno is directly proportionate to the outside temp when it was picked. Pick it on a cool rainy morning and it will be quite mild, but pick it on a scorching August afternoon and it will be a barn burner.

But they won't be hotter from one day to the next day, it takes some time. If it was raining on August 14th and blazing hot on Aug 15th your peppers will be the same. You can give it lack of water until it starts to wilt pretty bad then water. That's probably the simplest way. But wait until your plant starts to produce pods then start stressing it out. I don't intentionally stress my peppers, the summer heat and lack of water naturally does it for me. My peppers I pick right now are much hotter than what I pick in the spring or that I will pick come fall.
