Just my 2 cents, they can be a pain to paddle if you use the second person part...

The reputed "divorce boats"! I saw a couple in Lighthouse Lakes in a tandem, and only the guy was paddling. I yelled at them and asked why SHE wasn't paddling. She replied, "I left my paddle in the truck by accident"!. I asked, "Again"? I know a few couples with tandems, and the guy usually paddles. And, usually, the wife is the better fisherperson. I have a 2015 Ultimate FX 15 that I bought new so I could take my dad out.
Its been used about 10 times.

I am a newbie....got a OK 13' prowler, not had it wet yet!!! My next mission, take to nearby small lake and dump it; practice rolling it over, getting in, etc.
Now, query; I have read here and there about kayaks taking in a lot of water, especially if one doesn't close one of covers. It would seem to me - no flotation built in, material of boat light but not floatable(?) - they could sink!? True? (If so makes one's PFD very important - proper fit and comfort, all that).

Your kayak has scuppers, any water that comes in will drain out the scuppers (those holes in the bottom of the hull).

Spot on on scuppers . . . intended to let water drain to where it always wants to go: the lowest level available (the lake).

Material weight you mention, that it is light but may not float? It doesn't matter what material is used though some are certainly better than others. You will see concrete barges on occasion, steel ships of course, too. They float just fine. The "math" here is as long as the weight of the water displaced by the vessel is greater than its weight and load, it'll float. How well it floats depends on shapes and contours. We know that steel and concrete are heavier than water, so it is the shape these materials take on that allow them to displace more water weight than they represent.

I've never really owned a kayak that takes on much water, just what occasionally gets splashed in.

Good idea, for sure, to tump it over, learn how you will handle it when it happens.
