Ok so I got half a pallet of cherry tomatoes and would like to make a sauce for the smokehouse...apart from the obvious ketchup has anyone got any good recipes that would fit the bill???
I've also got a whole bunch of pineapples too..?

Roast them until the skin is chard and then make salsa

Pineapple Salsa!

Instructions
In a large bowl, combine pineapple, tomatoes, cilantro, red onion, and jalapenos. Add lime juice and toss to coat.
Season to taste with salt, pepper, and hot pepper sauce, if using. Allow flavors to blend at room temperature for 30 minutes, or chill until serving time. Serve with tortilla chips.

You guys eat Haggis and Spotted Dick, does it really matter if it preserves it?

IDK but would imagine it would last for a time in the refrigerator.

I got two boxes of chilli's aswell so will throw them in, I think this salsa would go nice with haggis and spotted dick thumb

I think it would jar up very well. Both pineapples and tomatoes are acidic. Add Serrano peppers to make it even more so.

Tomatoes sliced and covered in sharp cheddar on smoker or grill make a great side dish. Smoked pineapple spears will make you slap your mama.
