Looks like most of the ones I put out. Everything is cooked per the thermometer, tenderness, and tastes great but I have an issue creating a substantial bark. I use a vertical propane smoker.
A five spot for a shot and a beer? And you wonder how we wound up here.

Let me first say that I didnt smoke this. The folks who do our band barbecue called and asked if I wanted to throw anything on their smoker. They try to get as much meat as they can in there if theyre going to fire it up. Id say it can cook at least 30 briskets at a time. Should I have trimmed some fat off before putting it on?

I was going to say trim a little more fat off before I read your comment. Fat will breakdown faster than the protein which will cause the seasoning to run off. I like to trim the fat side down to 1/4 and clean up all the fat on the other side. Any hard fat needs to go because that stuff never breaks down well.

Fed ex over night... I once sent a fully cooked and frozen brisket to Camp Cropper in Baghdad. I packed the box with ice packs and balled up newspaper. When my friend got it, he said it was still mostly frozen. He thawed it out, warmed it up, and used it to barter for other stuff around the camp.
Team wolfs I had to perform. It took a minute to get it all in my mouth and another five to swallow it all.
