And the verdict is ........ I haven't had Tman's brisket, but if his is a 10 and Spring Creek/Coulter is a 6, this is about a 8.5. Tender, juicy, lot of smoky flavor. Definitely worth it, in my opinion. Cool. Do you have to trim and season it? I always though about trying it. At $1lb, that's a steal. I also think Soulman's brisket is pretty damn good. I had some Friday at the I-20 and Lancaster location. No, according to Soulman's, it's against health regulations to take it out of the cryovac packaging before bringing it to them. So, no trim, no seasoning before taking it to them.

We do the same thing, but at $2.50lb, raw weight. I do 2-3 cases of brisket each week for a huge catering company out of Ft Worth. Great to know Tman! Quite honestly if its a buck or 2.50 its a freaking steal considering the work that goes into this. Tman has done several for me and all turned out perfect as always. I buy them on sale from $1.77 to $1.99 /lb. so the $2.50 /lb. charge is like buying a brisket at normal price. Taking it to Tman always guarantees a great return on getting it smoked to perfection. He does this professionally and I do it part-time, so this is a no brainer.
