I am interested in getting a kayak that would work for fishing small bodies of water but also light enough that I could haul it and stow it all by myself. Many of the places I'd like to use this to fish would NOT have a boat ramp.

Most all kayaks you can get a cart. Then learn the load tecnique and that lets you get whatever you want.

Hurricane, Necky, Old Town, and others have kayaks in the 45-55 lb range. And there are many carts available, or build-a-cart-yourself videos available. My kayak is 65 lbs, I usually sling it on my shoulder and rarely use the cart I bought.

Bonafide SS127. Only 75lbs and can handle anything. Cannot go wrong with this yak. Stable, paddles extremely well, tracks well, lay out and finish second to none. I car top mine alone without problems. I can't recommend it enough.

You might look into getting a 10' sit inside kayak as they weigh around 45# total and are easy to carry and car top.
Kayaks have come a long way in recent years and the hull designs are stable if you look for a more tunnel hull design rather than round. The Intrepid and Vapor are two that are excellent for your type of use.
I've got a family member who uses one on small ponds and he loves the compactness and easy handling, and he hasn't sunk his yet after five years.
Disclaimer:.....People who throw stones at sit insides have never owned one, or tried to conquer water where it shouldn't have been used.

I prefer remote, small water and I'm with Jimbo on this one. I've found that if you put a PVC cart under a plastic behemoth, you then have to find a way to get behemoth+15 lbs up the hill back to your vehicle. The older I get, the more I love my old Heritage Featherlite.

Mine is Native craft slayer pro 10, 58LB, it can hold 500LB. Wide enough, so you can stand up. Usually I pull it to my rail of SUV on the top.

I know EXACTLY what I'd get . . . and it isn't a kayak but a close cousin. I'd get a Meyers Sportspal S-13, world's greatest fishing canoe brand. It merges 3 distinct advantages into a single vessel:

1) It is light at 57 lbs. making it easy to get on and off the water, from the garage to the lake and back. On top of a car, back of a truck, you name it.

2) It is super stable, more so than even a 150 lbs. PA 14. So, you can stand in it effortlessly. So many kayaks claim to be stable enough to stand in but you rarely see it on the water. 9/10 are sitting down.

3) Two grown men can use it. It carries a ton of weight.

4) You can add up to a 3 HP motor or a trolling motor later if you desire.

I could go on and on. Come on down to Lake Athens and use my S-15 one day if you need to test one. I think being able to stand and fish gives one about a 10 or 20% advantage.

I should mention one other. If standing is not a priority for you, don't recall your weight being mentioned, then just grab an Eddyline Caribbean 12. It weighs 45 lbs. It is a superb paddler and they have an "Angler" version. If you are bigger, there is a 14 Caribbean that weighs 50 lbs.

It'd be like carrying a large piece of luggage down to the water.

And, in the eyes of many, it's one of the best looking kayaks on the market.

I am a shade under 6 ft tall and weigh 185ish.

Standing would be a desirable feature, but not an absolute deal breaker.

I've watched some videos of the Bonafide SS127 and the Meyers Sportspal S-13. Very interesting.

Depends on how much you have to spend. Do you want new or used? Are you hauling it in back of your truck or will you need a rack for a car?
