Just wondering how good they work? Are they hard to install? Any additional hardware needed? I have a 2016 FX 21 LE with built in gen 3s (I think)

Easy install. Need NEMA2k starter kit if not already on boat. P-1 is more accurate than internal GPS on units. There is no speed difference between the P-1 and Gen 3s internal GPS. It will double the speed of a Gen 2 (map orientation, etc.) and 10 times faster for Gen 1. The true bow heading works only with Gen 2 and 3, not Gen 1.
I like mine for its precision and update improvement for the earlier Gens I had. It is not a necessity, though. I have a Xi5 TM and I think it helps place the TM in the exact location where intended.

If you fish offshore the point1 is a must, its best quality is its heading sensor. It keeps your graph screen from spinning in circles when sitting still.

I ran a Point-1 when I had Gen-1 units and observed the same operational characteristics as you.

Lowrance FAQ: The Point-1 antenna/heading sensor is a standard NMEA2000 device. Therefore, it will connect to any NMEA2000 backbone and communicate with any NMEA device on that same network. The HDS Gen2 models, both keypad and touch, with software version 2.0 or higher will have GPS damping and filtering features, as well as the ability to initiate heading calibration from the HDS, that will not be present in any HDS Gen1.

I don't have G1 anymore but when I did and installed the P-1, I assure you it was faster. I even collaborated with Lowrance on this before purchasing. Example. I was so use to the 'delay' when running boat lanes on Fork, that after installing Pt-1, I kept over steering because of the faster mapping. At one point, paying attention to the unit I over corrected because I was so use to the delay that I found myself 200 yds off track, which when realized, I quickly shut down to idle back to the track (think stump fields to avoid). If you're getting the heading sensor with a Gen-1 good for you - I didn't at anchor (yes, I did the circles thing). So I got faster mapping, you don't. Go figure!
