What size drift socks do you use? I have a 21 foot excel aluminum boat that can easily be blown around over 1 mph.

I use 2 56" Cabela's Advanced Angler socks on my 18' ranger when the wind is howling and I will only go about .7 MPH.

Regular winds under .5.

Best price I have found on 54" socks $30.17

I have 2 of these 54" and 2 yellow 32 from Academy. and im good in any wind to about 20mph

It's best to have multiple socks so that you can control your speed with different wind speeds. You can either buy multiple size socks or several the same size and deploy more than one. I would recommend different size socks and also drift paddles work great if you have power poles.
