Nothing special. Though last weekend for my kids B day instead of making stuffed jalapenos I made it into a dip.

4 packages cream cheese
10 or more Jalapenos
1 package of bacon
1 16oz pack of sausage
BBQ Rub

Cook sausage and mix with the cream cheese. I like to mix in a tablespoon of Meat Church Honey Hog in the mix. Grill jalapenos until charred and take off the charred skin. I took out the seeds and guts of the penos prior to grilling. Chop fine and mix with the cream cheese mixture.

I cooked the bacon about 1/2 way done in a skillet first and let it cool. Put the cream cheese mixture in a small dish and layer the top with the 1/2 cooked bacon cut up into 1/2" pieces or so and bake on 350 for an hour. It was excellent.

I will probably stop at the Koffee Kup on my way back from a weekend leadership conference at Lake LBJ and have a slice of chocolate pie. That will probably be the highlight of Super Bowl Sunday 2018 for me.

I bought these from a bakery in Shreveport yesterday. The best King Cake Ive ever had was from Ralphs Market in Gonzales, La. I bought 3 when I was down the a couple weeks ago.

I got asked to 3 different Super Bowl parties, yes, shocking, I know.

1. catered by Cantina Laredo
2. the hosts are sporting a "chili cookoff"
3. backyard meat on the grill, which will obviously be burgers, dogs, sausage, etc., and the usually backyard grilling fare.

I'm not sure what I'm doing yet. I freakin' can't stand the thought of seeing a NE possible victory.

Sorry, here you go, I'm not Kaytlenn:

Whatever chips, you need something salty and sturdy, not those weak chips or julio chips with seasoning.

A good melting mexican cheese like oaxaca, queso quesadilla, or something like pepper jack. Coarsely shredded.

Gulf shrimp, not the rubbery farm rasied kind. I cut mine in half, so don't splurge on the expensive jumbo ones unless you plan on not cutting them in half for presentation purposes. Season with redfish magic and saute in butter set aside.

Crab meat, again, not the expensive lump, it's going on nachos. Break up crab in some tomatillo salsa and mix a bit, set aside.

Saute some onion and jalapenos, add the shrimp and at last second add some diced fresh tomatoes.

Layer some perfect chips on a pan, top each chip with a pinch of cheese, then a spoon of shrimp, then top with crab tomatillo sauce and broil everything till the cheese is melted.

I've tried it using pico and cooking the shrimp and crab and everything together and i've also tried it with little bay scallops, but this is the way I prefer the most. If it's too watery, your chips get soggy and they suck, don't let that happen.

Jerk chicken wings were marinated over night. A bunch of habaneros a couple of jalapeos ginger and some other stuff.
