I have a recipe that we have been enjoying. Easy as can be.
Devil Thighs - Moist and tasty.
Take boneless chicken thighs or whatever cut you like. Coat them in Dijon mustard (and/or spicy mustard, BBQ, Buffalo Sauce, ect), dip them in Panko crumbs (add parmesan and parsely if you like)and bake on 350 for about an hour.

I don't like thighs or Dijon, but I do like white meat and BBQ or buffalo sauce!
I'm not exactly sure what "panko" actually means, even though I've seen it on menus over the last couple years. I'll look it up.
As for recipes, I'll add a couple later.

Canola oil is low in saturated fats and good for deep fried foods. Panko crumbs are high in carbs. No oil needed on this recipe. Lay them on parchment paper and let them cook. Use the Panko in moderation if you worry about the carbs. Sprinkle instead of rolling it.

The 'Healthy' part is the kicker. I cook with lard, bacon grease, and coconut oil. It's healthy but nobody believes it. I guess my soups are healthy, but their meats are browned in one of the three, so there we go again.

I have a healthier suggestion.
Use Coconut Flour instead of panko.
Bacon grease is healthy as long as it is refrigerated.
Whether you think you can or you can't, you are probably right.

Good sub for regular flour. Also almond flour and flaxseed flour. They all have fewer than 3 net grams of carbs per 1/4 cup serving. (Regular wheat flour is ~21 net grams per 1/4 cup serving.)

Cast, some food experts are saying lard in moderation is better than all this processed and hydronated stuff because it is natural and our body knows how to process it. Plus, there is no way to cook a good mess of greens without bacon and bacon fat. I love to eat at Patsy's which is pretty much in Fink and her cooks know how to cook and season greens. Hubby goes for the calf livers on Tuesday's and I enjoy her chicken fried steak and all the other various veggies you get as part of the meal, but I relish the greens. Yes, we will have to eat at Patsy's this coming Tuesday.
