I bought these potatoes thinking OT could help me out with a good recipe. The mushrooms last week turned out great and since potatoes have more potential I'm looking forward to the ideas. I'd like to put some andouille sausage in there.

Chop the potatoes and fry til done
Add the chopped sausage til its warmed up
Scramble a couple of eggs in the sausage and potatoes.
Sprinkle shredded cheese on top and serve.

Little late to the party but something I love doing with the really small bite size potatoes is boiling them until they're just soft. Then coat a baking sheet with a little spray pam or something, cut the potatoes in halves or quarters to make them nicely bite size, and a little lemon pepper, tony's, parmesan and rosemary, Arizona dreaming from Penzy's, you get the idea. Season them in something good, turn the cut side down on the baking sheet and bake for 20 minutes at 400 until they crisp up a little bit.

Can't beat fried or with egg...or bacon and sour cream....man I love tators. But sometimes I just make a tent foil and throw on the grill with butter, garlic and seasoned salt (or regular salt..depends on mood), then top with parmesan.
