An UnTrimmed brisket weighing about 11.5 #........ has about how much weight after a COMPLETE FAT TRIMMING? I have been making my jerky only using Eye Of Round. 1 1/2# to 1 3/4# pack of sliced Eye of Round runs about $8.50 at HEB. The above brisket would cost a little over $22 untrimmed. Although brisket is about the last cut of meat (beef) you would want to make jerky out of....I'm thinking you would get more bang for the bucks!! So, when I get an approximate on how much a super trimmed brisket would weigh using the above weights, I can tell how much cooked jerky I will have in weight. Thanks

Lets see, when I cook a brisket on the egg, I trim off the fat cap to about 1/4-1/8 thick. Thats the goal, anyway. Theres a ridge of fat in there thats sometimes pretty substantial. I get some of the fat where the point and flat come together. I try to find briskets with less trimming needed. Id say 5-10 percent gets trimmed off.
But thats to smoke. The point or deckle has a lot of marbling and that fat going to stay around when you make jerky. The deckle might be 25 percent of the brisket Im guessing. And theres the fat between the deckle and flat.
Heck, select eye of round is just $3.79 at HEB and thats regular price. Why not use that? Brisket is only a little cheaper, $2.00 on sale and there a lot of fat. Its going to be a lot of work getting all the fat out and you might end up with less yield when all is said and done. Theres virtually no waste with an eye of round.
Slice your own select eye of round. Put it in the freezer until semi frozen but not solid. Slices like a dream in that state. Sharp, thin, non serrated knife works great. I like my slices about 1/8 thick before drying.

I bought a pack of Eye of Round Thin at HEB in League City,Tx. Price per # $6.84........Net Weight 1.18#...........Price $8.07 I will check what a Chunk costs shortly

I bought a pack of Eye of Round Thin at HEB in League City,Tx. Price per # $6.84........Net Weight 1.18#...........Price $8.07 I will check what a Chunk costs shortly Wow, its a lot more in League City than the Lake Jackson HEB. I make beef jerky once a month or so and pick up 2-3 pounds of Select Eye of Round for never more than $4 per pound. Maybe you are getting choice or prime.

I know one thing, I'm going to get that " Eye of Round Roast" thing for about $20...I got my meat slicer and now is a good time to put it to use.
