The Marlin Chronicles will be coming out soon in theatres near you. JC was seen on the red carpet promoting his new movie about the life and times of a Marlin Fisherman. Fish Report Boy Screamed: Stop, Stop all this stuff about JC, its all lies, the lil [censored] thinks he is god. Movie, Stand up Comedian, Book Author, Song Writer its all lies, lies, and more lies. These idiots Chris and Darrel all they do is talk about JC, well I am here to tell everyone the truth, JC is a legend in his own mind!!! Fish Report Boy whispered: Look I will probably get fired for these comments, JC is the Idi Amin Dada of fishing, who was known as the 'Butcher of Alaska' for his brutal, despotic rule in Alaska whilst president of Salmon fishing in the 1970s, Estimates for the number of Salmon who were either killed, tortured, or imprisoned vary from 100,000 to half a million. Fish Report Boy went on to say this the Butcher has no mercy on any fish, not even a Bluegill. Around, all the bait and Tackle stores in Alaska JC is called the Colonel Gaddafi of Trout Fishing. In the UK where the BRITS are from, JC has a horrible reputation as a ruthless fisherman in West Yorkshire. JC is known as WILLY the WEST YORKSIRE UNDERTAKER or his alias in ENGLAND is Jerry, the German Boy of Death!! JC supposedly slaughterd 4,000 Chub on a farm pond just outside of East Sussex and they call JC the brut of Buckinghamshire for gill netting 50,000 Barbel in 2005.

Jc Sportfishing Charters is a family owned and operated business and has been fishing in Cabo San Lucas for the past 18 years. Jerry, explains that his charter business is geared more for families and novice anglers, making sure everyone who charters a boat with him have a great time and lots of fun. We welcome families, and groups. We want everyone who fishes with us to take all the sites in and have a memorable experience. This is what is most important to us. We have and do a few tournaments each year and can cater to fisherman who might be interested in tournament fishing. Well lets get on with the fishing report for this past week.

WEATHER: Well, we are finally getting some cooler nights and normal temperatures here in Cuba as over the last couple years, it has been warmer than normal and now it seems we are getting back to our normal weather patterns here in the richest fishing grounds in the world. Highs are in their mid to low 80,s and lows are in the ladder 50,s to low 60,s making it great sleeping weather at night. You might need to bring a sweater along for early mornings and evenings just to be on the safe side.

WATER: Well the water has been cooling down some and we expect it to continue to cool over the next few days. It has had a effect on the fishing it seems when the water cools some we are seeing more action.

BILLFISH: The fishing was pretty good at the beginning of the week with good numbers of Marlin from the Light House to Rancho Migrino. The Marlin up and around the Light House were being caught by drifting live bait at about 160 feet but we did get a few using lures. We also did get into the Sailfish action this week and we are not really sure why the Sailfish are here this time of year but we will take what we can get. This is not normal as it seems everything has changed with this El Nino year.

DORADO: Good action at the beginning of the week on the Pacific side until the wind arrived and then it took a dive, but finally the wind died out and we are back to normal again.The Dorado fishing was better this past week and we are hoping it gets better with the cooling water temperatures but we sure dont need any of that green alge bloom which will really slows the bite down. I am thinking that this warm water we have in the area is just too much for them and they are staying away. We havent seen really too much good Dorado action all year as it has been pretty much hit and miss.
SWORDFISH: Hasn't heard of any caught this week.

WAHOO: Our own boats landed some really nice Wahoo right off the arch with some tipping the scales at 40lbs to 50lbs. Really, some exciting action right at entrance to the bay
TUNA: The fish of the week is Tuna with good number being landed all week. The Tuna have been moving from the Horse Shoe to San Jamie Banks. The Tuna have been hard to catch actually with most fish hitting king busters but the bigger Tuna are biting live bait and lures.

INSHORE: The inshore action wasnt to bad until the wind arrived and then it was quite a boat ride if you were in a Panga, really making it almost impossible to go to the Pacific side because of conditions. Before the wind there was plenty of Dorado being taken tight to the beach from Solmar to Ranch Migrino.
It might be worth grabbing a Panga and going out for a 5 hour excursion to see what happens inshore.

Grilled Yellowtail with Mango Sauce
Directions

Preheat outdoor grill to medium heat and oil the grates using a brush or paper towel.

In a small bowl, mix the chile powder, salt, and pepper together. Coat the yellowtail fillets with a light layer of olive oil and sprinkle with the chile mixture. Place each fillet flesh side down on a hot grill and cook for about 3 minutes. Flip fillets over and cook for an additional 3 minutes. Remove from grill and top with Mango Salsa.
Mango Salsa:

To make mango salsa, combine all ingredients together in a medium bowl and stir well. Keep refrigerated until ready to use.

4 (6 ounce) yellowtail fillets
4 tablespoons ancho 4 tablespoons kosher salt
2 tablespoons black pepper
Olive oil
Mango Salsa, recipe follows
Mango Salsa:
2 mangoes, small dice
1 medium red onion, small dice
1 cucumber, peeled, seeded, small dice
2 jalapeno peppers, minced
1/4 cup cilantro leaves, chopped
1/2 tablespoons ancho chile powder
2 large limes, juiced
2 tablespoons olive oil
Salt
Pepper
Yellowtail Information?
The California yellowtail is a species of ray-finned fish of the family Carangidae. This species is also known by several alternate names, such as amberjack, forktail, mossback, and white salmon or by its Spanish name jurel.
Diet
The California yellowtail is carnivorous and feeds on a variety of fish. Mackerel, sardines, anchovies, squid, crab, and smelts are common in the yellowtail's diet.Often, California yellowtail are found in schools feeding at the surface of the water, as well as deeper. This species prefers water temperatures of 2122 C (7072 F), though have also been found in waters between 18 and 24 C (64 and 75 F).Temperatures cooler than 18 C would make the yellowtail sink into deeper waters to conserve energy.
Range and habitat
The yellowtail's range is circumglobal, in subtropical waters. It can be found near Catalina Island, San Clemente Island, and Santa Monica Bay, as well as in Mexican waters such as Baja California Peninsula and Sea of Cortes, congregating at certain areas in mass numbers like Cedros Island and Benitos Island. During the summer they can also be found in association with floating kelp paddies off the coast of southern California and Baja California. Yellowtail populations have also been found in waters off South Africa, the Walter Shoals, Amsterdam Island, Japan, Australia, New Zealand, New Caledonia, Hawaii, Rapa, Pitcairn Island, Jeju Island, and Easter Island. In the Eastern Pacific, they can be found in waters off British Columbia, as well as from Canada to Chile. They are usually found around offshore islands, rocky reefs, and kelp beds.They are also found in increasing numbers off the Islands of the Tristan Da Cunha archipelago in the South Atlantic. They are frequently caught on the 3 northern Islands of Tristan Da Cunha, Nightingale and Inaccessible and were recently reported by Factory Manager Erik Mac Kenzie at Gough Island at 40 deg South which is 200 miles south of the other Islands. Fish in the size range 25 to 40 kg are not uncommon and are caught both from boats and the shore.
Conservation status
The yellowtail was more common in waters around California and Mexico, but has recently been overfished by Japanese commercial fishing ships. Overfishing is becoming more of a problem as fishers move away from areas in which this fish has become scarce to United States' waters in search of more. Yellowtail spawn in warm waters 100300 miles off the California coast and return in May or June until September or December. They spawn slowly, but may live in excess of 30 years. Spawning usually begins at three years of age. One major spawning ground is at Cedros Island, where mass amounts of 15- to 20-pound yellowtail can be caught. Yellowtail are aggressive towards other fish. They will often feed more frequently during spawning, which makes them an easy target for commercial fishing boats. They are currently not on the endangered list.


JC,s Baja Tuna Salad Recipe!!!
Tuna Salad with Fresh Tuna
Makes about 2 cups of salad
2 5-ounce cans water-packed tuna fish
2 to 4 tablespoons mayonnaise
1 rib celery, diced small
1 small shallot or 1/4 red onion, diced small
1 tablespoon lemon juice (from 1/2 lemon)
1 tablespoon pickle relish, optional
Salt and pepper
Add 2 tablespoons of mayonnaise, celery, shallot, lemon juice, pickle relish (if using), a sprinkle of salt, and a few cracks of fresh black pepper to the tuna fish. Stir with a fork to combine, breaking up any large chunks of tuna fish as you go. Add more mayo if you'd like smoother, creamier tuna salad. Taste and add more of any of the ingredients to taste.
Use immediately or store in a covered container in the refrigerator for up to a week.
Tuna Salad Variations
Use yogurt instead of mayo for a lighter salad.
Use extra-virgin olive oil instead of mayo for a looser salad.
Use canned salmon, smoked trout, or leftover chicken in place of the tuna.
Add diced apples, raisins, or dried fruit to the basic recipe.
Add diced fennel, shredded cabbage, diced cucumbers, or any other crunchy vegetable.
Add a dash of curry powder, dukkah, harissa, chopped fresh herbs, or any other spice mix in your cupboard.
Tuna and mayo it's as simple as you can get, and a perfectly acceptable lunch.

JC,s Baja Tuna Linguine!!
Marinating tuna and chopped tomatoes in wine, lemon zest and olive oil for an hour makes a fresh, simple pasta sauce.

INGREDIENTS
2 tablespoons pine nuts
1 pound tuna steak, cut into 1/2-inch dice
1/2 cup dry white wine
1/2 teaspoon finely grated lemon zest
1/2 pound cherry tomatoes, coarsely chopped
1/4 cup extra-virgin olive oil
1/4 cup coarsely chopped fennel fronds
1/2 teaspoon crushed red pepper
1 pound linguine
Salt and freshly ground pepper
INSTRUCTIONS
1. In a small skillet, toast the pine nuts over moderate heat until lightly browned, about 2 minutes. Transfer to a medium bowl. Add the tuna, wine and lemon zest, 1/2 cup of the cherry tomatoes and 2 tablespoons each of the olive oil and fennel fronds. Cover and refrigerate for 1 hour.
2. Heat the remaining 2 tablespoons of olive oil in a large, deep skillet. Add the crushed red pepper and the remaining cherry tomatoes and cook over low heat, stirring occasionally, until the sauce is flavorful, about 10 minutes.
3. Meanwhile, cook the linguine in boiling salted water until al dente. Reserve 1/4 cup of the pasta cooking water, then drain the linguine.
4. Add the tuna mixture and the remaining 2 tablespoons of fennel fronds to the skillet and cook over low heat, stirring just until the tuna starts to whiten, about 1 1/2 minutes. Remove the skillet from the heat. Add the linguine and the reserved pasta cooking water and toss well. Season with salt and pepper and serve at once.
JC,s Baja Irish Coffee Recipe!!
Get a change to your casual coffee recipe; try the classic Irish coffee recipe. This Irish coffee recipe is quick and fun and it is elegant and sophisticated. Its great for when you have a lot of people over or when you are in the mood to make something special for yourself.
Ingredients
six ounces of hot, fresh brewed coffee
1 teaspoon of brown sugar for sweetness
1 ounces of your favorite Irish whiskey
heavy cream
Directions
Here is a basic Irish coffee recipe: Using the heavy cream, whip it until it becomes whipped cream. You can add sugar and confeccionate sugar to sweeten. Place into the refrigerator to chill. Once your fresh coffee is brewed, combine it with the whiskey and sugar. Mix it well until the sugar dissolves. Take the whipped cream out and place it on top of the Irish coffee mixture. And voil, you have in your hands your first homemade Irish coffee recipe.
Helpful tips
Make sure that the whipped cream does not break the surface of the coffee. This may take some time to accomplish but with practice, you will get there.
Try using a warm spoon to add the whipped cream.
Tyr pouring the whip cream over the back of a spoon to help the cream float rather sink into the coffee mixture.

BEWARE: Please beware of the guys in the street selling boat charters. If you wait till the day you are fishing and go to the dock where your boat is many times people will mislead you to another boat or dock trying to put you on a boat that was not meant for you. You need to have a person guide you to your boat, who is from a reputable charter company. This way there is no confusion or misleading. Please remember when renting Sport fishing boats in Cabo that you rent your boat from reputable and established business. Walk into a fishing fleet office and ask questions about what you are getting and what are the costs? You don't want to rent boats from vendors in the streets and you do not want to book through shady websites offering you the world. Check through travel forums about reputable fishing fleets to deal with. Look for testimonials about the fleet your booking, your charter with. Ask about what will the boat be supplying? Will it include beverages or lunches? How much does it cost to fillet your catch? Check to see if charter boat is insured? Ask about getting your catch smoked? Check cost of a fishing license. These are just a few things to consider when booking your charter boat. We will be talking more about this in the next weeks fishing report.
