/Anybody fry fish in one ????? I made a DIY metal basket just for that purpose. Will be trying fish on the Big Easy sooner than later.

Salmon and shrimp on the Big Easy Maybe the best salmon cooker Ive ever used Looks really good. How long? Im thinking maybe 20 minutes max...

Salmon was 20 minutes. Put it inside a DIY grill basket
Shrimp kebabs took 10 minutes
Done quite a bit of reading at the Char-Broil Big Easy forum. Several of the experienced Big Easy cookers describe a 2 inch zone at the very bottom of the cooker that doesnt get quite as hot.
SolutionI put a small, narrow grill wok/topper (a few dollars from Walmart) at the very bottom before I put the diy grill basket in
Another solution I consideredcut two empty aluminum beer cans in half and use those as diy leg supports for the grill basket
If you are using the traditional Char Broil Big Easy basket for chicken/turkey, ham etc you will notice that the basket has 2 inch legs

The cool spot at the bottom has always been an issue. I took a cheap springform cake pan, removed the bottom (which just slides out), set the ring inside the BE and it raises the basket by 2-2.5 inches. Problem solved. Still using the same rig for quite a few years.

Another useful tip
The Big Easy will cook smaller pieces of lean meats (poultry, pork tenderloin, fish) quickly Example: whole chicken in about 90 minutes. Drum sticks in an under an hour. Wings ( next on the list) would be about 40 minutes
Dont be afraid to use honey or brown sugar as part of your marinade or rub for these smaller pieces of meat
The Big Easy seems to cook at just the right temperature so that the sugar content doesnt burn (if total cook time is less than 90 minutes)
The sugar caramelizes and makes for a nice golden brown, crispy exterior with the Big Easy
With other cookers/grills Ive limited sugar/honey until the last 30 minutes to avoid burning
Now, with a 14lb turkey going for 2.5hours on the Big Easy, I wouldnt use brown sugar or honey until the end (last 30 minutes)

Must admit; the Masterbuilt/butterball electric oil less fryer cooked the juiciest most flavorful turkey Ive ever had
