St Louis cut pork ribs at 225 will take at least 5 hours (even if foiling for the middle 90 minutes).
I'd go at 250.
When you open the door at the 8 hour mark to put the ribs on, the temp will drop suddenly and significantly. I imagine electric smokers will take their time getting back up to temp; thus I'd go no lower than 250, unless you have an over excess amount of free time on your hands (like Sumlin)

Ok, tomorrow is the day, I put it together yesterday, I have baby back ribs, some pork rub, oak and hickory chips, a rib rack holder type deal, I grabbed a beer can chicken thing too for later. A digital thermometer/meat probe thing. I am getting some sugar free sauce today as I'm trying not to be fat. What am I missing. I have read forums, looked at recipes, procedures etc. I plan on 225 as the temp. One question in I would like to do a pork butt at same time for later, is 225 an acceptable temp for that cause I'm seeing people do those a little hotter. Have you cleaned and preseasoned it?

225 is an acceptable temp for cooking/smoking pork butt; but be prepared for a long, long cook. If it's a significantly sized pork butt, I wouldn't be surprised if it takes 16+ hours at 225 to get to 195 internal temp. Then you should wrap it in butcher paper and rest it for at least an hour.
I usually smoke pork butt at 275, and at times that has taken 12+ hours. I wonder if I threw the butt in first at 275 for 8 hours them backed temp to 225 and added ribs about 2 o'clock I'm thinking 4-5 hours for them. I have literally done a pork butt at 275 and it was done in 8 hrs. It really can vary depending on how much product is in the unit.

This whole multiple temp thing is an issue. I'll pick up another smoker today and it won't be a problem

All smoker manufactures recommend seasoning the smoker It burns off any plastic residue from the factory/packaging and gets a layer of oil on the metal.

Are there any must cook, must do, great seasonings, advice, dos, dont, etc etc etc. Wait.....is this the same dude that told me boiled meat has no place????? But, bought an electric smoker??? Shall we go ahead and start our recommendations for best sous vide cookers?

They had little wood chip burners also. I suspect lots of bbq places still use them
