St Louis cut pork ribs at 225 will take at least 5 hours (even if foiling for the middle 90 minutes).

I'd go at 250.

When you open the door at the 8 hour mark to put the ribs on, the temp will drop suddenly and significantly. I imagine electric smokers will take their time getting back up to temp; thus I'd go no lower than 250, unless you have an over excess amount of free time on your hands (like Sumlin)

I wonder if I threw the butt in first at 275 for 8 hours them backed temp to 225 and added ribs about 2 o'clock I'm thinking 4-5 hours for them.


I have literally done a pork butt at 275 and it was done in 8 hrs. It really can vary depending on how much product is in the unit.

I'd wipe down all the racks and stuff with a mild liquid detergent like Dawn before using them.

This whole multiple temp thing is an issue. I'll pick up another smoker today and it won't be a problem

All smoker manufactures recommend seasoning the smoker
It burns off any plastic residue from the factory/packaging and gets a layer of oil on the metal.

I'm not talking about seasoning, I'll do that. With 2 i can do more stuff at once.

Lol, no. This smoker is basically a non commercial version on the Alta shams we used to use commercially. They had little wood chip burners also. I suspect lots of bbq places still use them
