I figured I would post this here since I just posted it in off topic.
3 lbs 80/20 ground chuck 1 whole can bread crumbs 4 partially beaten eggs 2 green bell peppers cut down fine 1 onion diced down small 6 tbs fiesta fajita season Sauce 3/4 cup ketchup 2 tbs mustard 1 tbs worcestershire 1/4 cup woodys bbq sauce 1/4 cup brown sugar dissolved in sauce
I put all the onion, bell pepper, bread crumbs, and egg in bowl. Break all the ground chuck by hand into little clumps and drop in seasoning in layers along with half of the sauce.Mix it without over working it. Dump and flatten the mixture out in a 9x12 pan and add rest of sauce to the top. cook at 375 till it hits 165. Enjoy

love me some meat loaf. i like cold meat loaf sandwiches the next day almost as much.

Mine from last night. Unfortunately I can't give you the perfect measurements and mine varies wildly depending on what I happen to find in the pantry. 1 pound of ground meat (used venison this time) 1/2 (ish) sleeve of crackers crushed. You can use bread crumbs, saltines, ritz, garlic butter ritz, club, whatever you find. Healthy glug or two of worstershire 1 egg I skipped the raw onion this time and used some crispy fried onions. That works extremely well. No bell peppers in the fridge, so I used 4 of the small sweet peppers. I've used hatch in the past and it worked really well. Very generous squirt of ketchup in the meat. I stuffed this one with manchego cheese. It got gooey and made beautiful strings but didn't run out all over the place. Out of bacon this time or I would have covered it in chopped bacon. But still did my signature 1/2 barbecue sauce 1/2 ketchup glaze.
