How do y'all like to cook squirrels..I prefer smother fried with gravy and rice....but would like to explore other possibilities.

Never have had a tree rat. Are they that good for the little meat on them?

My favorite was fried in a cast iron skillet that my grandma in Indiana cooked. And the gravy she made out of what was left in the skillet. Sort of like southern fried doves with the mushy breading. I never learned how to do that and make the squirrels tender.

I'm told the little young ones are the best for frying but her's were whatever size my grandad and uncle brought in.

I had some in Chicago one time a guy brought to the jobsite. He'd cooked them in a crockpot in barbeque sauce - those were tender and tasty. I tried some on the grill and they turned out tough and dry.

yes sir they are very good... squirrels have a unique flavor and texture that I enjoy...some can be rather tough while others are fall apart tender...it's all in how you cook them.

sounds like your Grandma knew what she was doing...that's basically what I do ,only I use a pressure cooker to make them really tender..if you want to chicken fry them you can pressure cooker them for about 15 or twenty minutes and then batter and fry them...or you can batter and lightly fry them first then put them in the pressure cooker with some broth let them cook for about twenty minutes..sort of makes its own gravy...that's my favorite way...that's also how my mother did deer steaks and gravy .

I make squirrel stew out of mine (usually about 4 whole squirrels gutted and skinned). I put them in a big pot of boiling water and boil until the meat starts to fall apart and off the bone. Pour water out and let them cool off so you can handle them like pulling pork. Next, make your stew mix with potatoes, tomatoes and anything else you like in stew. Then start pulling all the meat off the bone and mix in well. Cover and cook until all the flavors come together. You can do the same with rabbit too.

rabbit cut up and in the brine now. gunna cook it tomorrow,freeze and take to the deer camp fri night. been thinking about it since reading this thread.

Squirrel Sauce Piquante is one of my favorite memories of hunting in LA.

We did some on the grill in high school camping once. Weren't too bad at all, covered them in salt/pepper maybe some bbq sauce, wrapped in foil I believe and threw'em on the grill. Suppose you could wrap in bacon like a dove breast and cook on the grill as well.

bowl of milk and egg, dip in flour. I fry them until golden brown, use lots of salt and pepper. After I get them golden crunchy I wrap them in tin foil and finish them in the over until tender. Use milk/four/leftover grease for gravy! cant beat it

also delicious with tabasco chipotle sauce

Live in plano, can i shoot the squirrels i see and tress and eat them? heard they were full of bot flies fleas and parasites? I'm willing to throw them on the spit but concerned about these things

So I have dogs that kill squirrels every couple of days...I need to start taking advantage of this!

i have a friend with a pecan orchard. he screws rat traps to some of the trees and hot glues a pecan to the trap. when he gets home from work he goes around collecting the dead squirrels from the traps.

If you live in the city you cannot even shoot an air rifle. Had a buddy do this and his neighbor called the cops and he got a ticket for it.

Even if you're not in the city - air rifles are out for squirrels. Not "legal means" for a game animal. In the city, there's no legal way to kill squirrels.

The law has changed on this. YOU CAN use an air rifle for squirrels as long as it is a minimum caliber of .177 and a minimum velocity of 600 fps according to TPWD website.

There's this little pecan tree at my mother in law's house in town... squirrels don't stand a chance.
