I didn't want to hyjack the other EXCELLENT fried crappie recipe so I just started another. Like Tex Exp, I just happened upon this and it was about as good as any fried recipe I've tried...and that's saying something because around here, I'm known for putting fried crappie on the shelf, ABOVE the top shelf! (Sorry, didn't mean to brag!)
Here it is... (recipe is for 1 pound of filets so multiply accordingly or to taste)
1 - pound filets
1/2 cup corn meal
3/4 cup reg.(unflavored)Bread crumbs
1/2 cup milk +/-
1/2 tsp dried dill
1/2 tsp fresh cracked pepper
1 tsp salt
1/2 tsp paprika
3 Tbsp melted butter

Preheat oven to 500* and cover a cookie sheet with parchment paper
Soak filets in milk for at least 1 hour before coating
Combine all dry ingredients into a "dredge"
Take each filet and shake off excess milk then press into dry mix on both sides, until well coated and arrange on parchment paper.
Drizzle melted butter on filets
Place in oven just above center rack position
Bake for approx 20 minutes or until fish flakes easily. (May only take 15 minutes)

Really goes great on crappie Tacos!!

Thanks Pepop, sounds great. I just printed this for the cookbook. Will be giving this a try soon. Like others have mentioned, I'm trying to avoid the grease. thumb

I'm getting a couple orders for ol' Joe but I'm thinking its a little early. Year before last it was KILLER from around Thanksgiving till after Valentines Day.

Yeah, I know but I hate to see good crappie recipe's in the same place as "Carp Ceviche"! LOL!
