Looking to mount and use my Nexus 7 tablet with Navionics boating app. Do any of you do this? If so what's some good mounting options?

I use this mount natomounts on my phone which is pretty heavy. I have one mounted in my truck and my boat. I've never had it fall off on rough road or rough water. Your tablet is a little larger but it's a pretty strong magnet and if you prep the dash properly it will stay adhered even in the heat. I like it because I have easy access to it for either vehicle. I was a little skeptical about the boat at first. I figured the first time in rough water it would go flying but have been pleasantly suprised with about a years use of it.

The nexus tablet is plastic...is there metal plate or something they make that sticks to phone?

Yes it comes with a small round base for phones and a little larger rectangular base for tablets. Just stick to the back. FYI, the plate can be mounted under a case which I tried on my wife's phone but it doesn't attach near as well as the metal directly to the magnet. My boat dash was shaped perfectly for it to fit to one side of the steering wheel and be in a viewing position.
